Stuffed LE ROUGE ROYALE® Brand Peppers

Ingredients
- 4 LE ROUGE ROYALE® Brand Peppers
- 1 Pound Ground Beef
- 1 Can Corn
- 2 Cloves Garlic, Finely Chopped
- 1 Cup Yellow Onion, Finely Chopped
- 1 ½ Cup Tortilla Chips, Finely Crushed
- ½ Cup Monterey Jack Cheese, Shredded
- 1 Teaspoon Chicken Bouillon
- Sprinkles of Garlic Powder to Taste
- Salt and Pepper to Taste
Directions
- Cut tops off and remove center core of peppers.
- Place in microwave bowl & cover with plastic wrap.
- Microwave on high for 3-4 minutes.
- Brown hamburger with seasonings and drain excess oil.
- Add onion and garlic powder, cooking until onions are tender.
- Remove from heat. Add corn, tortilla chips and cheese.
- In baking dish, add ½ inch water and bouillon and place pepper in pan.
- Make sure pan is small enough to hold peppers tight so they don’t fall over.
- Stuff peppers with meat mixture topping with some cheese and crushed tortilla chips.
- Cook at 350º F for 40 minutes uncovered.
