Spicy Chicken and Green Grapes Lettuce Cups

Makes 4 Dinner Servings

Ingredients

  • 1 Tablespoon cornstarch
  • 1 Tablespoon water
  • 3/4 Cup low sodium chicken broth
  • 1 Tablespoon Sugar
  • 1 Tablespoon Red Wine Vinegar
  • 3 to 5 Teaspoons Asian chili paste with garlic
  • 1/4 Cup soy sauce
  • 1 Tablespoon peanut or vegetable oil
  • 6 Cloves garlic, minced
  • 3 Tablespoons fresh ginger, minced
  • 1 1/2 Pounds ground chicken breast
  • 1 1/2 Cups green seedless grapes, halved
  • 3/4 Cup green onions, thinly sliced
  • 1 Head iceberg lettuce, cut in half and separated into leaves
  • 1/4 Cup cilantro, coarsely chopped
  • 1 1/2 Cups cucumber, julienned

Directions

  1. Make the sauce.
  2. In a small bowl, combine the chicken broth, soy sauce, chili paste, cornstarch, water, sugar, and vinegar.  Set aside.
  3. Heat the oil in a large, nonstick skillet over high heat.
  4. Add garlic and ginger and sauté for 30 seconds.
  5. Add the chicken and cook until it is no longer pink, 5 to 8 minutes.
  6. Add the grapes and green onion and sauté for 30 seconds more.  Stir the sauce mixture and pour into the skillet.
  7. Cook, stirring constantly, until the sauce has thickened, 1 to 2 minutes.
  8. Remove from heat.  Spoon the hot chicken mixture into the prepared lettuce leaves.
  9. Garnish with cucumber and cilantro.
  10. Serve immediately.
