Ingredients
BLACK DIAMOND® Brand Plum sauce
2 BLACK DIAMOND® brand plums pitted
½ cup water
1 tablespoon apple cider vinegar
3 teaspoon honey
2 teaspoons salt
¼ teaspoon pepper
12 Black Diamond Plum wedges1/2 inch thick
4 boneless pork chops
2 tablespoons olive oil
2 teaspoons salt
¼ teaspoon pepper
Preparation
BLACK DIAMOND® Plum Sauce
Cut two Black Diamond plums and remove pits. Place in blender with water, vinegar, honey, salt, pepper and blend well. Remove sauce and reserve in a bowl. Cut 12 each ½ inch wedges onto a Black Diamond plum and remove from pit. Place wedges in sauce to absorb flavors.
Pat dry 4 each 1/2 inch thick boneless pork chops. Season pork chops with salt and pepper on both sides. Place in hot sauté pan with medium high fire. Add 2 tablespoons of olive oil and wait till the oil starts to smoke lightly. Gently place 4 pork chops in pan each down and away from you. Let chops sit on one side till brown on the edge and underneath. Gently flip each pork chop over and cook till brown on edge. Remove pork chops from pan and add into pan Black Diamond wedges and sauce. Cook till it reduces for about 2 minutes. Place pork chops in the center of each plate at an angle. Place 3 Plum wedges around each pork chop. Spoon a little sauce on top and around each pork chop. Can be served with vegetables and mashed potatoes.
